In Lima, food is an inalienable right, a ritual celebrated in every bite. Chifa, is the perfect fusion of Chinese Sichuan tradition and local inputs, that stands out in this gastronomic universe where there are more chifas than pollo a la brasa places.

Madam Tusan, a project designed by Gastón Acurio and Félix, the chef of the Royal Hall, emerged as an icon. It wasn’t just another Chinese restaurant; it pioneered serving dim sum and tea even for breakfast outside Chinatown (and was by casualty my barrio chifa).
props & vestuario
Our team faced a monumental challenge: documenting over 140 dishes in less than 10 days. Each tray, with its unique shape and seasoning, had to convey personality and craving. Four states: clean for crop, served with human consume (filmed in a an iPhone 14 too) and ambient alone. Angelo Aguado, our samurai chef and his precision in mise en place with the impeccable coordination of a team of five cooks in two shifts were essential for our goal.

Beyond the kitchen, the production required almost 100 costume changes using H&M clothing to adapt to different genders, ages, and backgrounds, enhancing the dish’s color palette. This was possible thanks to Karla Caceres help. The menu was meticulously divided, with ingredients, proteins, dim sum, rice dishes, pasta, combos, and banquets photographed in detail. It was an ambitious project executed with the Hambre Agency of the Delossi group, memorable.
